Potato Leek Soup

This warm, comforting recipe was shared with us by our guest, James from the Thicc Radio Podcast. It was something he remembered his mom making for him as a young child and it never fails to remind him of home.



Prep Time: 10 min

Cook time: 45 min

Yield: 6-8 servings







Ingredients

  • 2 Leeks

  • 1 bulb of Garlic OR 1/4 cup Garlic and ginger paste

  • 2 Onions

  • 1 bag (1.25kg) Maris Piper potatoes

  • 1L Vegetable stock

  • 1/4 tsp Nutmeg

  • 600ml Double cream

  • Salt and Pepper to taste

  • Butter to cook


Directions

  1. Boil the potatoes in a large pot, then strain and set them aside.

  2. Dice onions and saute with garlic in butter.

  3. Cut, wash, and dice the leeks, then add them to the pot and sauté with more butter until soft, approximately 5min.

  4. Add potatoes to the pot and the stock. Add extra water if necessary.

  5. Simmer for 10 minutes, add nutmeg, salt and pepper to taste.

  6. Use a hand blender to puree the soup, then add cream and puree again.

  7. Serve!


Zhuzh it up!

  • In the episode, we discussed all the ways we might zhuzh this one up - serve it in a bread bowl, crumble bacon on top, and at the very least, enjoy with a large chunk of fresh bread and butter.
