Farro Breakfast Pudding with Dates and Cardamom

Simple enough for everyday, but also special enough for guests. This farro breakfast pudding is sweetened with dates and spiced with cardamom - a winning combo in our opinion! Enjoy with a hot cup of spiced chai.


Prep Time: 5 min

Cook time: 30 min

Yield: 4 servings





Ingredients

  • 1 cup unsweetened plant milk or milk of your choice

  • 2 cups water

  • 1 tsp vanilla

  • 1/2 tsp ground cardamom

  • 1 cup farro, rinsed and drained

  • 8 to 10 large medjool dates, pitted and chopped


Directions

  1. In a medium saucepan heat milk and water over high heat. Once boiling add the vanilla, cardamom, farro and dates. Stir and return to a simmer. Cover, reduce heat to low, and cook for about 30 minutes or until most of the liquid has been absorbed.

  2. Remove the lid, and stir the farro for 2 - 3 minutes to release more of the starch and thicken the pudding. Remove from heat and serve.

  3. You can store this in the fridge in an airtight container for up to four days. Reheat gently, adding milk or water if needed.


Zhuzh it up!

  • We like a little crunch sprinkled on this farrow pudding, such as chopped nuts or granola. Plain greek yogurt would also be delicious and balance out the sweetness.

  • We enjoyed our farro breakfast pudding with a hot cup of homemade spiced chai.
