Sheet Pan Kebabs

Looking for a great weeknight meal in a snap? This delicious recipe is ready in 1 hour or less. These sheet pan kebabs deliver a juicy, flavourful meat wrapped up in a hot flatbread with a crunchy, sharp salad and creamy dressing. Grab some napkins and dig in!

Prep Time: 30 min

Cook time: 20 min

Yield: 4-6 servings


Ingredients

Meat

  • 1 1/2 lb ground meat (beef, pork, lamb)

  • 1/2 bunch parsley

  • 1 onion

  • 1 red pepper

  • 3 cloves garlic

  • 1 tbsp diced chipotle pepper paste

  • 1/4 cup tomato paste

  • 1 tsp black pepper

  • 1 tsp turmeric

  • 2 tsp paprika

  • 1/2 tsp salt


Salad

  • 1 red onion

  • 2-3 roma tomatoes

  • 1/2 bunch parsley

  • 1 lemon

  • 3 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp salted lemon paste

  • 1 1/2 tsp sumac


Sauce

  • 1/2 cup tahini

  • 1/2 cup water

  • 1 lemon

  • 1/2 tsp salt

  • 1/2 tsp salted lemon paste


Directions

Meat

  1. Coarsely chop the parsley, onion, pepper and garlic. Place into a blender and blend into a slurry. Remove to a cheesecloth lined mesh strainer & allow the blended veggies to sit and juices to drain out for about 20-30min. Or manually squeeze out about 1/2 cup of liquid. **Do this first & then begin working on the salad and sauce

  2. Pre-heat oven to 425F.

  3. In the bowl for your stand mixer, combine the ground meat with the chipotle peppers, tomato paste, pepper, turmeric, paprika, salt and the strained veggies. Mix everything together using your stand mixer until a homogeneous meat paste is formed.

  4. Line a baking sheet with parchment paper. Spread the meat mixture in an even 1/2-inch layer on the baking sheet.

  5. Score into strips and squares using a baking scraper or spatula.

  6. Bake in pre-heated oven for 15min. Then broil for 3-5 additional minutes to brown the meat. Remove and serve on flatbread with salad and sauce.


Salad

  1. To a large mixing bowl add thinly sliced onions & tomatoes and chopped parsley. Add the juice of one lemon, olive oil, salt, salted lemon paste and sumac. Mix everything together with your hands. Cover and place in the fridge.


Sauce

  1. Combine the tahini, water, juice of one lemon, salt and salted lemon paste in a mason jar. Screw on the lid and shake to combine everything. Place in the fridge.
