Sunshine Salad

A classic jellied salad we loved as kids and still enjoy today! Easy to make and sure to bring a little sunshine to your table.



Prep Time: 15 min

Chill time: 8.5 hrs

Yield: 8 servings




Ingredients

  • 2 (3-oz) packages lemon flavored Jell-o

  • 2 cups boiling water

  • 1 cup ice water

  • 1 (9-oz) can crushed pineapple with juice (NOT fresh pineapple)

  • 1 tsp lemon juice or white vinegar

  • Pinch salt

  • 2 cups finely grated carrots

Directions

  1. Empty the Jell-o powder into a small mixing bowl. Stir in 2 cups of boiling water. Stir thoroughly until the gelatin has dissolved.

  2. Stir in 1 cup ice water, the crushed pineapple with its juice, lemon juice (or vinegar), carrots and a pinch of salt. (Make sure you use canned pineapple. Fresh pineapple has an enzyme that will prevent gelatin from setting.)

  3. Pour into mold and refrigerate until set (several hours or overnight).

  4. Place a plate over the mold and turn it over to release. If it sticks, you can gently lower the bottom of the mold into warm water to loosen it and try again.

  5. Slice and serve!
