Discover the delicious flavours of Filipino cooking with this fantastic chicken adobo dish. The flavours get better when you marinate your chicken overnight!
Prep Time: 10 min
Marinate 1hr to overnight
Cook time: 40 min
Yield: 4-6 pieces of chicken
Ingredients
4-6 pieces of chicken, leg-in bone or thighs
3 dried bay leaves
3 tbsp soy sauce
2 tbsp white vinegar
2 tbsp rice vinegar
4 cloves garlic, smashed or diced
1 cup water
1 tsp brown sugar
1 tsp whole peppercorns
cooking oil
sliced fresh green onions
Directions
Combine the soy sauce, white and rice vinegar, garlic and bay leaves. Add in the chicken pieces to the marinade. Cover and refrigerate overnight or at least 1 hr.
When you are ready to cook, heat up a cast iron pan over medium-high heat and turn your oven on to 400F.
When the pan is nice and hot, add oil to coat the bottom of the pan. Add the chicken to the pan, skin side down and sear until the skin is crispy, about 3min. Flip and sear with the skin side up.
Set aside the chicken on a plate. Then add the marinade to the pan & scrape off any brown bits that stick to the bottom. Add in the water, sugar and peppercorns. Bring the mixture to a boil.
Add the chicken pieces back into the pan and the place in your oven. Bake for 40min or until the chicken is cooked through.
Serve with fresh sliced green onions.
Zhuzh it up!
Change up the flavours and add your own personal touch by changing what vinegars you use - try cider vinegars or wine vinegars or cane vinegar.
Great when served with coconut rice.
