Pesto Eggs over Sourdough Bread

Another fast breakfast or brunch to celebrate time together with family and friends. Without putting too much time into it.

Prep Time: 15 min

Cook time: 10 min

Yield: 4 servings


  • 4 large eggs

  • 8 tbsp pesto of your choice

  • Feta or goat cheese

  • Sour dough bread sliced thick

  • Red pepper flakes

  • Salt and pepper to taste


  1. In a large frying pan, heated to medium low heat, add pesto.

  2. Crack four eggs over the pesto and increase to medium heat. Cover and cook until egg whites are cooked and yolks are clouded over. (Take off heat element if necessary)

  3. Transfer eggs and pesto over sliced sourdough bread.

  4. Garnish with crumbled feta cheese, salt, pepper and red pepper flakes.

Zhuzh it up!

  • Lightly toast your sourdough bread in the pan with the remainder pesto. Still a one pan meal and extra delicious.
