One-Bite Almond Cookie Balls

Reward yourself with these one-bite almond paste cookies. These special little bites are the perfect combination. The chewy soft texture of the dough and deep almond flavours are perfectly complimented by the crispy, toasted almonds. A true delight!
Prep Time: 25 min
Cook time: 30 min
Yield: ~ 24 cookies
Ingredients
155g almond flour
75g powdered sugar
25g all-purpose flour
1 tsp baking powder
1 tsp lemon zest ~ one lemon's worth
200g marzipan (almond paste)
1 egg white
30mL milk
3-4 drops almond extract
sliced almonds
Directions
Combine the marzipan, egg white, milk and almond extract in the bowl of your stand mixer.
While it mixes, combine the flours, sugar, baking powder & lemon zest in a separate small bowl.
Once the wet ingredients are blended together evenly, add the dry ingredients in two batches, mixing between additions to make sure all the dry ingredients are incorporated.
Use a cookie scoop to portion out the dough balls. Roll each dough ball between your palms and then in sliced almonds.
Place on a parchment lined cookie sheet and bake at 350F for 12-15 min or until lightly browned on the bottoms.
Transfer to a wire rack and allow to cool. Sprinkle with powdered sugar & serve or store in a tin lined with wax paper.
Zhuzh it up!
If you've got it on hand, omit the milk and add a Tablespoon of Amaretto or any other almond flavoured liquor.
