Instant Pot Korean Style Beef


 



This quick and easy recipe gives you delicious beef to toss on a salad, a rice bowl, tacos, noodles... the sky is the limit! It's flavourful but not spicy. Kid-approved!



Prep Time: 10 min

Cook time: 30 min (plus 15-20 mins slow pressure release)

Yield: 4-6 servings





Ingredients

  • 1 whole head garlic, peeled and minced

  • 2-3 inch fresh ginger, peeled and grated

  • ½ cup soy sauce

  • ½ cup brown sugar

  • 2 tbsp gochujang (Korean red chili paste)

  • ½ cup mirin (sweet cooking wine)

  • ¼ cup sesame oil

  • ½ tsp salt

  • 3 lbs ground beef

  • salt and pepper, to taste (for seasoning the beef)

  • 2 tbsp oil

  • 1 large red or yellow onion

Directions

  1. In a bowl mix together the garlic, ginger, soy sauce, sugar, Gochujang, mirin and sesame oil. Set aside.

  2. Choose the sauté setting in the instant pot and heat the oil. Brown the ground beef, and season with salt and pepper.

  3. Remove the beef from the instant pot and pour out most of the fat (or use a paper towel to soak it up), leaving a little to sauté the onion. Add the onion slices to the pot and cook for 1-2 mins.

  4. Return the beef to the pot with the onions. Pour in the sauce made earlier. Stir briefly.

  5. Turn off the instant pot and choose manual pressure. Cook on high for 30 mins. Allow natural release for 15-20 mins before opening the lid.

  6. Serve on rice with veggies and siracha mayo.
