Garlic Pull-Apart Buns

Fluffy warm buns slathered in garlic and butter. Start this recipe in the afternoon and you'll have a pan of steaming hot buns to feature for dinner.
Prep Time: 20 min + 2-3hrs rising
Cook time: 20-25 min
Yield: 12 large or 24 small dinner buns
Ingredients
Dough
2 1/4 tsp active dry yeast
1/3 cup warm water
1 tbsp white sugar
1 cup milk
3 tbsp unsalted butter
2 eggs
1/2 tbsp salt
4 1/2 cup all-purpose flour
extra butter for greasing cast iron pan
Garlic Butter
3 tbsp unsalted butter
2 tsp minced garlic
2 tbsp chopped fresh parsley
freshly grated parmesan cheese
flaky sea salt
Directions
Dough
In a measuring cup stir together warm water and white sugar. Sprinkle the active dry yeast on top and allow it to activate. It should bubble and become frothy in about 10min. If not, get new yeast.
While activating the yeast, in a small saucepan add milk and butter. Heat on low until just warm enough to almost melt the butter. You should be able to comfortably hold a finger in the warm milk. If it gets too hot, let it cool down.
In a small bowl, beat together the eggs and salt.
In the bowl for your stand mixer, add the yeast, milk and egg mixtures and stir everything together. Add in the flour a cup at a time, mixing with the dough hook attachment, until most of it is incorporated. Once all the flour is added, let the mixer knead the dough for about 5 min until the dough is smooth and a little tacky to the touch.
Transfer the dough to a greased bowl and cover with a towel. Allow it to rise to double in a warm place. About 60-90 min.
Punch down the doubled dough and weigh. Divide into 12 portions.
Grease a 10-inch cast iron pan with unsalted butter.
Form each portion of dough into a round ball, pinching the dough together on the bottom to achieve a nice, rounded bun shape.
Place the buns in the greased cast iron pan and allow them to rise for a further 45-60 min or until doubled again.
Pre-heat oven to 375F. Melt a couple tablespoons of butter and brush it over the tops of the buns just before placing them in the centre of the pre-heated oven to bake for 20-25min or until the tops are golden brown.
Garlic Butter
Melt together butter, minced garlic and parsley in a small saucepan over low heat while the buns are baking in the oven.
When you remove the buns from the oven, immediately brush the melted garlic butter over the hot buns. Grate fresh parmesan over top and sprinkle with sea salt.
Pull apart and serve.
Zhuzh it up!
These are BIG buns, I would recommend dividing the dough into 24 portions and baking them in two 10-inch cast iron pans.
Add 1 tsp of garlic powder to the dough for an extra hit of garlic.
