Full of Good Stuff Muffins

These muffins are literally chock full of good stuff - apple, zucchini, carrot, seeds and dried fruit. Mix up the add-ins and make them your own!



Prep Time: 20 min

Cook time: 30 min

Yield: 12 -16 muffins




Ingredients

  • 2 cups multi grain flour

  • 3/4 cup sugar

  • 1 tbsp cinnamon

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup shredded coconut

  • about 1 1/2 to 2 cups total dried fruit, like raisins, dried cranberries, dried blueberries

  • 2 cups carrots, grated

  • 1 apple, shredded

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/2 cup chia seeds

  • 1.4 cup hemp seeds

  • 3 eggs

  • 2/3 cup vegetable oil (or olive oil)

  • 1 tsp vanilla

Directions

  1. Preheat the oven to 350F.

  2. Mix together flour, sugar, cinnamon, baking powder and salt in a large bowl.

  3. Add dried fruit, coconut, seeds, raisins, apple and carrots. Stir to combine.

  4. In separate bowl whisk eggs with oil and vanilla.

  5. Combine this mixture with dry ingredients and blend well. This will be very thick.

  6. Fill 12 -16 regular size muffins.

  7. Bake for 30-35 minutes. Tops will be nicely browned and tops crusty looking.

Zhuzh it up!

  • The original recipe includes an 8 ounce can crushed pineapple (drained really well to remove most of the liquid). I prefer them without the pineapple, but you might want to give it a try!
