Fried rice is a great quick meal that is delicious warm or cool. Be sure to have some cooled, leftover rice to get the texture of this dish just right. Adding the fried, canned salmon is a great way to increase your intake of fatty fish and up the omega-3 in your diet.

Yield: 2 servings
Ingredients
1 170g can salmon
2 tbsp olive oil
2 clove garlic
2 small sweet peppers
2/3 cup frozen peas
2 eggs
3 cups cooked rice, cooled (leftover works best)
2 tbsp soy sauce
1 tbsp sesame oil
Directions
Heat a non-stick frying pan over medium heat and add a splash of olive oil. Open and drain the salmon. Add the to frying pan & cook until heated through and a bit crispy. Remove from the pan and set aside.
In the same pan, over medium heat, add the 2 tbsp of olive oil. Finely dice the garlic and pepper and add into the pan. Fry up for a couple minutes until the garlic is fragrant. Then add in the frozen peas and cook for a couple minutes more.
Crack in the eggs and stir constantly until the egg is just cooked.
Add the rice into the pan and drizzle with soy sauce and sesame oil. Cook until heated through.
Divide the rice between two bowls and top with the fried salmon.
Zhuzh it up!
This is a great, quick meal that can be made with leftover fish, chicken, beef or shrimp.
Add a fresh sliced avocado, bean sprouts, green onions, seaweed sheets or any other favourite topping to this rice.
