You don't need a special occasion to make this delicious lime cheesecake. It only takes one brick of cream cheese and is quick and easy to execute. It bakes up great as a mini cake, muffin sized or in jars.

Yield: 1 small cheesecake
Ingredients
Crust
1/2 cup graham cracker crumb
2 tbsp butter, melted
1 tbsp granulated sugar
Filling
8 oz cream cheese
3 tbsp sour cream
1/3 cup granulated sugar
2 tbsp lime juice
1 tsp lime zest
1/2 tsp vanilla
1 egg
Directions
Crust
Pre-heat oven to 325F.
In a bowl stir together the graham cracker crumb and 1 tbsp of granulated sugar. Add in the 2 tbsp of melted butter and stir with a fork until everything is buttery and crumbly.
Press the buttered crumb into a 6-inch round pie dish. Bake at 325F for 5min. Remove from the oven, set aside and keep oven at temperature.
Filling
In a medium bowl, beat together softened cream cheese, sour cream, 1/3 cup granulated sugar, lime juice, lime zest and vanilla until the batter is smooth.
Add in the egg and beat on low until combined.
Pour over the pre-baked crust and bake in 325F oven for 35 min or until it no longer jiggles in the middle and a knife inserted in the centre comes out clean.
Zhuzh it up!
This recipe can also be used to make 9 mini-cheesecake muffins. Divide the crumb and filling evenly between 9 silicone muffin molds and adjust baking time to 15-18min at 325F.
Change up the citrus, lemon and orange work great in this recipe, too!
