Dijon Salmon with Capers

This recipe, shared by our guest Chef Colleen Cackowski, is Diebetes-friendly, easy to make on a weeknight, and impressive enough to serve to guests.
Prep Time: 15 min
Cook time: 18-20 min
Yield: 4 servings
Ingredients
2 Tbsp. butter, at room temperature
1/4 cup Dijon mustard
1/4 cup fresh parsley, finely chopped
3–4 cloves garlic, minced
2–3 Tbsp. capers
Salt and black pepper, to taste
1 1/2 lbs. salmon, preferably wild-caught
Optional Garnish:
Juice of 1 lemon
Splash of olive oil or extra melted butter
Directions
Preheat oven to 375°F. Line a baking tray with parchment
paper.
Mix the butter, mustard, parsley, garlic, capers, salt, and
pepper in a small bowl.
Place the salmon, skin side down, on the tray. Coat the top
of the salmon generously with the herbed mustard mix.
Bake for 18–20 minutes, depending on size and thickness.
When salmon is finished (cooked through and flaky), remove
from oven and slice into individual portions. Do not overcook,
since the salmon will continue to cook, even after you remove
it from the oven.
Squeeze a bit of lemon juice with a dash of olive oil on top
of each portion before serving.
