Brownies in Cast Iron

Chocolatey, gooey and hot describe the perfect brownie to us. And what's better then your own individual serving done the way you like it. This recipe includes four different options for toppings so you can try something new or keep it classic. Delicious served with ice cream or whipped cream!


Prep Time: 25 min

Cook time: 25-30 min

Yield: 4, 6-inch, cast iron pans

Ingredients

  • 1 1/2 cup all-purpose flour

  • 6 tbsp cocoa powder

  • 1/4 tsp salt

  • 9oz semi-sweet chocolate

  • 3/4 cup unsalted butter

  • 4 eggs

  • 1 cup brown sugar

  • 1/2 cup granulated white sugar

  • 1 tbsp vanilla extract

Directions

  1. Pre-heat oven to 350F.

  2. In a small bowl, combine flour, cocoa powder and salt. Set aside.

  3. In a medium saucepan, over low heat, melt together the chocolate and butter. Remove from the stove and place on a heat-proof surface to cool.

  4. In a medium mixing bowl, add the eggs, brown & white sugar, and vanilla extract. Beat with a whisk until frothy. Slowly pour the melted chocolate & butter into the bowl with the egg & sugar, whisking continuously, until combined.

  5. Now add the flour to the bowl of wet ingredients and gently stir together until just combined using a rubber spatula.

  6. Evenly divide the batter between four, 6-inch diameter, cast iron pans. *See the Zhush it up below to modify the basic recipe*

  7. Place the cast iron pans on a baking sheet and place in the pre-heated oven. Reduce the temperature to 325F. Bake for 25-30min.

  8. If you like the brownies cooked through, make sure the centre of the batter is puffing up to the match the height of the rest of the brownie. If you like them gooier, the centre of the batter should be slightly sunken when you take them out of the oven.

Zhuzh it up!

  • HAZELNUT BROWNIES : Add 1/4 cup of crushed hazelnuts to each pan & gently fold the nuts into the batter. Then follow the baking instructions in step 7.

  • PEANUT BUTTER BROWNIES : Add 1 tbsp of peanut butter to each pan and swirl & spread it into the top layer of the batter. Then follow the baking instructions in step 7.

  • SALTED CARAMEL BROWNIES : Add 1 tbsp of salted caramel sauce to each pan and swirl & spread it into the top layer of the batter. Sprinkle with a bit of coarse salt. Then follow the baking instruction in step 7.

  • If you don't have smaller cast iron pans, you can bake this in 8-inch, square baking dish. Just grease the baking dish before adding the batter and adjust the cooking time (longer) for the doneness that you desire.
