Upside Down Apple Cake

Looking for something a little different to do with apples? Bake your apples covered in batter and then flip the cake upside down to reveal their ooey-gooey goodness. Drizzle with a simple icing and serve up this perfect fall dessert!


Prep Time: 20 min

Cook time: 45-50 min

Yield: 1 8-inch round cake


Ingredients

Apples

  • 3 cups peeled, cored, diced apples

  • 1 tbsp lemon juice

  • 1/4 cup brown sugar

  • 1 tsp cinnamon

Batter

  • 3 eggs

  • 2/3 cup granulated sugar

  • 2/3 cup sunflower or canola oil

  • 1 tsp vanilla

  • 1 1/3 cup all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/4 tsp cloves


Directions

  1. Pre-heat oven to 350F

  2. Add lemon juice to a large bowl. Peel, core and dice apples, placing them directly into the bowl and stirring to coat with lemon juice. This helps prevent browning.

  3. Then add the brown sugar and cinnamon to the apples. Stir to coat them evenly, then pour them into the bottom of a parchment lined 8-inch springform pan.

  4. In a mixing bowl, whisk together eggs, granulated sugar, oil and vanilla. Set aside wet ingredients. In a separate bowl stir together flour, baking powder, salt and cloves. Add the dry ingredients to the wet ingredients and whisk gently to combine everything until no dry ingredients remain.

  5. Pour the batter over the apples in the pan. Use a spatula to even out the batter, if needed.

  6. Bake in the centre of the pre-heated oven for 45-55min or until a toothpick inserted in the centre of the cake comes out clean.

  7. Remove the sides of the springform pan and then invert the cake.

  8. Drizzle with a 1:1 glaze of milk to icing sugar and serve. Serve warm or cooled.


Zhuzh it up!

  • What type of apple should you use for this? Something crispy & tart; I enjoy using a classic granny smith, honeycrisp or cosmic crisp. I would recommend avoiding a McIntosh or Spartan apple.

  • Upside-down cakes can be made with many different fruits, just give it a whirl! We've been successful with cherry, rhubarb, pineapple & plum but pick your favourite, adjust the spices & then tell us all about it!
