A lime margarita baked into a cupcake.
This is the perfect treat for anyone who loves a good ol' lime margarita. With a single lime, a couple oz of tequila and some salt and a few minutes you can create a delicious boozy cupcake - made just for adults.

Yield: 6-7 cupcakes
Ingredients
Cupcakes
2 egg whites
1/4 cup granulated sugar
3 tbsp sunflower oil, or vegetable oil
1 tsp vanilla extract
zest of one lime
1 oz lime juice
1 oz tequila
1/2 cup all-purpose flour
3/4 tsp baking powder
1/4 tsp salt + more for finishing
Icing
1 cup icing sugar + more to get the perfect consistency* see directions
1/2 oz tequila
1/2 oz water
2 tsp butter
Directions
Cupcakes
Pre-heat oven to 325F
In a medium bowl, beat together egg whites and granulated sugar until white and frothy. Beat in sunflower oil until mixture is homogeneous.
Add the vanilla extract, lime juice & zest and tequila and beat until combined.
In a separate bowl, combine the flower, baking powder and salt. Stir together.
Add the dry ingredients to the wet ingredients and beat until batter is smooth.
Use a large ice-cream scoop to spoon the batter into muffin tin & bake in pre-heated oven for 15-18 min or until a cake tester inserted in the middle comes out clean.
Remove from tin and allow to cool on a wire rack.
Icing
While cupcakes are baking, mix the icing sugar, tequila and water together in a bowl with a fork. Add in the butter and mix until fully incorporated. Consider how runny your icing is after adding 1 cup of icing sugar and add more icing sugar remembering that you want to pipe a thin amount on top of the cupcake without it dripping off.
Decorate the cupcakes once cool & then sprinkle each with a finishing salt immediately after icing.
Zhuzh it up!
These are great without tequila. Just substitute milk (dairy or dairy-free) for the tequila in both the cupcakes and the icing. And I would suggest doubling the amounts so you get a full dozen!
