This is an easy recipe for cut-out sugar cookies. They're great on their own, or you can have some fun with icing!

Yield: 12 cookies
Ingredients
2 1/3 cups all purpose flour, plus more for dusting
1/4 tsp baking powder
1/8 tsp salt
1 cup butter, softened
2/3 cup granulated sugar
1 large egg
1 1/2 tsp vanilla extract
Directions
Stir together flour, baking powder and salt, set aside
In a bowl, beat together butter and sugar until fluffy and light.
Add the egg and vanilla, beating until well combined.
Gradually mix in the flour mixture and beat until just blended.
Press dough into two flat discs, wrap in plastic and refrigerate until firm (about 1 hr)
Preheat oven to 350F
On a lightly floured surface, roll out one disc of dough into a 1/4 inch thick round. Cut cookies with a cookie cutter of your choice, placing cookies on baking sheets. Repeat with the second disc, gathering bits and pieces and rolling until you've used it all.
Bake until golden on the bottom (you'll see it along the bottom edge when they start to colour), about 12 mins. Remove to wire racks to completely cool.
If icing, we recommend mixing icing sugar with milk a little at a time until you have the desired consistency for decorating.

The cookies in the photo were decorated by piping an outline of slightly thicker icing, and then flooding it with softer icing. NOTE: allow cookies to cool completely before icing, and then leave them alone for the icing to set.
