Mexican Refried Beans

These can be made with either canned or dried beans. If using dried, see the simple recipe for Frijole de Olla (Pot Beans) to get started. Then you're ready to make this delicious Mexican dip - refried beans!



Prep Time: 10 min

Cook time: 15 min

Yield: about 4 cups






Ingredients

  • 1 can black beans (or pinto beans), or about 2 cups pot beans (see recipe below)

  • 1/2 onion

  • 2 garlic cloves

  • 2 -3 chipotles in adobo plus sauce

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • freshly cracked black pepper

  • 1/2 cup stock (or water)


Directions

  1. Peel 2-3 garlic cloves (according to your love for garlic) and roughly chop 1/2 an onion.  Cook the onion and garlic in a little oil over medium heat (you can leave the garlic cloves whole). 

  2. Once the onion is starting to brown, approximately 5-8 mins, add beans (1 can drained and rinsed, or 2 cups cooked beans), 2 chipotles in adobo (or three, according to your love for smoky goodness) + the adobo sauce that comes with, 1/2 tsp cumin, 1/2 tsp salt, freshly cracked black pepper, and 1/2 cup stock (or water). Let simmer for a few minutes until heated through and then add everything to a blender, combining well. This can be as smooth or chunky as you like!

  3. Take a final taste for seasoning and heat.

  4. Store in an airtight container in the fridge. They'll keep well for a few days, but they won't last that long!


    How to make pot beans (frijole de olla)

    Prep time: 10 mins

    Cook time: 2 hours


  1. 2 cups dried beans

  2. 1 small onion

  3. 2-3 tbsp lard

  4. about 1L water


Instructions:

  1. Rinse and drain the beans.

  2. Add beans to a large pot and cover with water. Add the roughly chopped onion and 2-3 tablespoons of lard.

  3. Bring to a boil. Reduce heat to a simmer and partially cover. Let simmer 1.5 hours, checking periodically to ensure there is still enough water to cover the beans - add more if needed.

  4. After 1.5 hours, taste the beans. If they are grainy they need a little more time. Keep checking them often.

  5. Once they are close to done, add a little salt and simmer for another 10-15 mins. Salt to taste.

  6. Remove from heat when done and allow to cool. You're ready to make refried beans! Store remainder in an air tight container in the fridge - broth and all! You can also freeze them for later use.

  • Refried beans are delicious on their own with chips, in burritos or on tacos. We used the refried beans to make delicious open-faced sandwiches called Molletes. Enjoy them whichever way you like!
