Quick Salad with Citrus

This is a great recipe to toss together with fresh ingredients of the season. Check out the Zhuzh It Up section for great tips on how to make changes to the dressing and the fruits to keep things interesting & make it your own!

Yield: 4-6 Servings


Ingredients

Dressing

  • 1 1/2 tbsp olive oil

  • 1 1/2 tbsp white wine vinegar

  • 1 1/2 tbsp maple syrup

Salad

  • 10-12 leaves green leaf lettuce

  • 8 oz slivered almonds

  • 8 oz feta cheese

  • 1 orange

  • 1 blood orange

  • 1 grapefruit

Directions

  1. In a small mason jar, combine the olive oil, vinegar and syrup. Shake and set aside.

  2. Wash lettuce and cut or tear into bite sized pieces. Place in a large bowl and drizzle with the dressing. Toss to thoroughly combine.

  3. Peel and dice the citrus fruits into small pieces.

  4. You can combine all the ingredients and toss together before serving or only toss the salad with the dressing and top each serving with the fruits, nuts and cheese. It is totally up to you, I prefer the later as it leads to more even distribution of the ingredients.

Zhuzh it up!

  • Strawberry Salad: Modify the dressing ingredients to balsamic vinegar and honey. Substitute pepitas and sunflower seeds for the almonds and goat cheese for the feta. Instead of citrus fruits go for strawberries & kiwis.

  • Apple Salad: Modify the dressing ingredients to apple cider vinegar and brown sugar. Substitute walnuts and pecans for the almonds & diced cheddar cheese for the feta. Instead of citrus fruits go for diced apples (sprinkled with lemon juice) and pomegranate seeds.
