Plum Gin Fizz

A delightful, not-too-sweet fruity cocktail with fizz and a fancy foam!


Plum gin fizz in a wine glass, garnished with lemon peel twist


In a dry shaker combine:

  • 2 oz gin

  • 1 egg white

  • 1 tbsp lemon juice

  • 3 1/2 tbsp plum puree (see instructions below)

Shake for 15 sec.

Then add 6 ice cubes and shake for 10 sec.

Strain into a glass and top up with 4-6oz club soda.

Garnish with lemon peel & serve

*Omit gin & enjoy as a mocktail*

Plum Puree

In a medium bowl stir together:

  • 1 lb fresh or frozen plums, pitted and halved

  • 35g granulated sugar​​​​

Spread plums on a baking sheet. Roast in a 400F oven for 10 min. Cool, blend and press through a mesh sieve to create a plum puree. Makes enough puree for 3 cocktails. Make ahead and store in the fridge for up to a week.
