Pickled Garlic Scapes

The perfect garnish to a Caesar or Bloody Mary, this garlic stem has a sweet pickled flavour with just a hint of spice. This quick and easy fridge pickle will add that extra bit of flavour to zhuzh up your next cocktail hour.


Prep Time: 15 min

Additional Time: 2 weeks

Stovetop cook time: 5 min

Yield: 2-500mL jars


Ingredients

  • 2-500mL jars

  • 10-20 scapes per jar

  • 2 1/2 cup cider vinegar

  • 1 cup granulated sugar

  • 1/2 cup water

  • 1 tbsp salt

  • 1 tbsp peppercorns, crushed

  • 3-4 dried chili peppers

Directions

  1. Coil the scapes into the glass jars, leaving 1-inch of headspace at the top of the jar.

  2. In a medium saucepan, combine the vinegar, sugar, water, salt and peppercorns. Heat on medium-high and bring to a boil while stirring to dissolve the sugar and salt.

  3. Once boiling, remove from heat and fill the two jars so that the scapes are completely covered and there is 1-inch of headspace.

  4. Add the chili peppers, screw on lids and leave at room temperature to cool. Once completely cool, transfer to a refrigerator. Allow the pickle to set for 2 weeks in the refrigerator.

  • What's a Caesar? A Canadian Bloody Mary, invented in our hometown of Calgary, AB!

    • First, get your glass ready, I like using a mason jar. Grind together celery seed, salt and pepper and place on a plate. Wet the rim of your glass with a lime wedge and invert the glass onto the plate with the salt mix to make the rim salty & sour. If possible, let dry.

    • Fill half your glass with ice. Then add 1-2oz vodka, 1-2 tsp Worcestershire sauce, and a few drops of Tabasco sauce. Fill with Clamato Juice, stir and add garnish.
