Literally translated this is bread with tomatoes. It's a simple, delicious snack (or light meal - see below to Zhuzh it Up!) with great flavour when you've got fresh tomatoes and good quality olive oil.

Yield: 2 toasts




Ingredients

  • 2 tomatoes (we like to use romas)

  • 1 loaf of bread (we like focaccia - you can even make it yourself with this recipe)

  • 1 garlic clove (peeled and halved)

  • extra-virgin olive oil to taste

  • oregano

  • kosher salt

Directions

  1. Toast two slices of bread

  2. Cut the tomatoes in half and grate them into a bowl

  3. Add olive oil to the tomato and mix (start with a drizzle and add more if you want extra olive oil flavour)

  4. Cut the garlic in half and rub the cut portion on the toasted bread

  5. Spread the grated tomatoes on top of the bread

  6. Drizzle a generous amount of olive oil on top of the bread

  7. Sprinkle with salt and oregano

Zhuzh it up!

  • Make this breakfast - top with a sliced soft boiled egg and some micro greens.
