Korean Miso & Gochujang Braised Short Ribs

Braised short ribs on a bed of rice

These beautiful braised beef short ribs were inspired by the umami, sweet and spicy flavours of Korea and Japan. Your guests will be blown away by this fall-off-the-bone dish. And the best part is your slow cooker does most of the work.

Cook time: 8 hr (slow cooker) or 4 hr (oven)

Ingredients


Beef Short Ribs

  • 1.2 kg beef short ribs seared (about 4 short ribs)

  • 4-6 cloves garlic minced

  • 2 tbsp ginger grated

  • 1 onion sliced

  • 1/4 cup soy sauce

  • 2 cups unsalted beef or chicken stock

  • 1/4 cup honey

  • 3 tbsp gochujang

  • 1 tbsp white miso

  • oil

  • 1 tsp roasted sesame oil

  • salt & pepper to taste


To serve with

  • cooked short grain white rice

  • gochujang butter (mix soft butter with gochujang to taste)

  • kimchi, fried

  • spring onions, sliced

  • lettuce wraps

  • braised lotus root


Directions


Short Ribs

  1. Bring a cast iron pan to high heat and add a bit of oil. Sear the ribs for a couple minutes on high heat, flipping and browning on both sides. Remove to a large pot, dutch oven or slow cooker.

  2. Reduce heat to medium/low and fry your onions in oil until translucent. Add garlic and ginger and fry for 1 min on low heat.

  3. Add your fried mixture, soy sauce, honey, stock, gochujang & miso to the pot, dutch oven or slow cooker with your ribs in it.

  4. Dutch Oven/Large Pot Method: Heat Oven to 400F. Place pot in oven at high heat for 15min. Turn down oven to 290F and cook for 4hrs or until the meat is falling off the bone. Season with salt and pepper & proceed to step 6.

  5. Slow Cooker Method: Cook on medium low for 8 hrs until meat is fall-off-the-bone tender. Add salt and pepper to taste.

  6. Once cooked, remove from heat and add sesame oil.

  7. Pull meat off bone and strain your braising liquid.

Serve

  1. Serve the braised beef on a bed of rice.

  2. Top it with fried kimchi, gochujang butter, spring onions and put some lettuce on the side for wraps.
