Kohlrabi and Apple Salad

Crispy and sweet, this fresh flavourful salad is a great way to enjoy kohlrabi. Kohlrabi are in the broccoli family of vegetables and grow great in kitchen gardens. Plan to grow some in the coming year to make this tasty salad!

Yield: 4-6 servings

Ingredients

  • 1 lb kohlrabi

  • 1 cosmic crisp apple

  • 1/3 cup feta cheese, crumbled

  • 1/4 cup tarragon leaves

  • 3 tbsp sunflower seeds, toasted

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp lemon juice

  • 1/2 tsp fresh ground pepper

  • 1 tsp salted lemon juice or 1/2 tsp salt

Directions

  1. Cut up the kohlrabi and apple into matchsticks.

  2. To make the dressing, add the tarragon, olive oil, vinegar, lemon juice, pepper and salt in a small bowl and whisk to combine.

  3. In a large salad bowl, add the kohlrabi, apple, cheese and dressing. Gently toss the ingredients and serve.

Zhuzh it up!

  • Add your own touch to this salad - change up the vinegar to your favourite flavour, sub in goat cheese for feta or go for pumpkin seeds instead of sunflower seeds - this recipe is flexible to your favourite flavours!
