Instant Pot Mixed Peel (candied citrus peel)


 


This is an easy way to make candied mixed peel for baking in Hot Cross Buns and other goodies. They're also just delicious to snack on.



Prep Time: 10 min

Cook time: 50 min (with drying time)

Yield: 1.5 - 2 cups






Ingredients

  • 4 whole oranges, or a mix of citrus fruit (we used 1 large ruby red grapefruit, 2 naval oranges and 1 lemon)

  • 2 cups white sugar

  • 5 cups water

Directions

  1. Use a vegetable peeler to peel the fruit as thin as you can. If there is white pith, use a spoon to carefully scrape it off as much as you can.

  2. Cut the peels into small strips or pieces - the size doesn't really matter.

  3. Add 4 cups of water and the prepared peels to the pressure cooker. Close the lid, cook on manual high pressure for 10 mins then use quick release.

  4. Drain the boiled peels in a colander and rinse with cool water. Discard the boiling water and clean the pot.

  5. Add 2 cups of sugar and 1 cup of fresh water to the clean pressure cooker. Stir in peels. Set to sauté and stir constantly until sugar is completely dissolved.

  6. Place lid on pressure cooker. Cook on manual high pressure for 10 mins. Wait 20 minutes then quick release.

  7. Strain peels though small colander, saving the orange syrup for cocktails.

  8. Separate the peels into a single flat layer on a parchment lined cookie sheet.

  9. Bake peels in a 200F oven until they are no longer wet and sticky but are still pliable. This takes approximately 30 mins (check after 20 mins then every few mins to prevent over drying.)

  10. Cool peels completely on the parchment paper. Store in an air tight container at room temperature for up to 6 weeks.
