Prep Time: 15 min
Cook time: 10 min
Yield: 12-15
Ingredients
3 cup all-purpose flour
4 tsp baking powder
1 tbsp sugar
1 tsp salt
3/4 tsp cream of tartar
2/3 cup cold butter, grated
1 cup milk
Directions
Pre-heat oven to 425F.
In a large mixing bowl, combine dry ingredients. Grate the cold butter into the dry ingredients and mix them together with the handle of a wooden spoon.
Create a well in your butter and flour mixture. Add in your milk and mix it all together with the handle of a wooden spoon.
Use an ice cream scoop to portion out the dough into balls. Place each dough ball on a parchment lined baking sheet about 2-inches apart. Press down to flatten each ball to about 3/4-inch thickness.
Bake in oven for 10 min. Remove and serve hot and fresh.
Zhuzh it up!
Using the handle of a wooden spoon to stir together bread doughs and batters allows the ingredients to get fully incorporated without over mixing. I think it makes a fluffier, more consistent biscuit.
Substitute your salt with a flavoured salt like Garlic Scape Salt.
When your grating your cold butter, coat it with the flour mixture first. This makes it easier to hold on to so it doesn't melt and slip out of your hands.
