Inspired by flavours in a Sabich, a fried egg is served on a freshly toasted piece of naan bread slathered with tangy amba sauce, hummus and fresh chopped veggies. It's a complete meal when you need something quick, tasty, filling & delicious!

Yield: 1 serving.
Ingredients
1 naan, warmed
1-2 eggs
butter
1/4 cup tomato, diced
1/4 cup cucumber, diced
salt
lemon juice
hummus
amba sauce (see recipe) *Make ahead of time and freeze in 1 cup mason jars
Directions
Heat a small frying pan over medium. Add a generous dollop of butter to coat the bottom of the pan. Once melted and fragrant add your egg(s). Fry and flip until they reach their desired doneness.
Meanwhile, in a small bowl, combine the diced tomato and cucumber. Sprinkle with salt & add a splash of lemon juice. Set aside until you assemble your sandwich.
Toast or heat naan in an oven until soft and pliable, but not crispy.
Assemble the sandwich by spreading hummus on half the naan & spooning and spreading amba sauce on the other half. Slide your egg onto the naan and spoon the salad on top. Fold in half, bite into it and enjoy.
Zhuzh it up!
