This trending recipe is dumpling wrappers and filling, individually layered in adorable little ramekins. We wanted to try it out and see for ourselves if this trend was worth the hype. Yep! Sure is.

Yield: 8 Ramekins
Ingredients
1 pkg wonton wrappers (square) or dumpling wrappers (round)
750g ground pork
300g raw shrimp
4 spring onions
10 baby bok choy leaves
2 tbsp ginger
2 tbsp garlic
200g mushrooms
2 tbsp bacon fat (or butter)
5 tsp soy sauce
3 tsp sesame oil
3 tbsp xiaoxing wine
2 tsp sugar
3 tbsp corn starch
1 tsp pepper
Dumpling Sauce
Mix together equal parts rice vinegar & soy sauce. Then add a whatever other sauces you like. We recommend grainy mustard, and chilli oil or gochujang.
Directions
Finely mince the following ingredients and add to a large bowl : ground pork, de-veined shrimp, spring onions, bok choy and mushroom.
Mash the ginger and garlic with a mortar and pestle and add to the large bowl.
Mix all the ingredients in the large bowl together with your hands.
Add the bacon fat, soy sauce, sesame oil, xiaoshing wine, sugar, corn starch, pepper and mix again until an even paste is formed.
Open your package of wrappers and keep under a damp towel as you assemble the ramekins.
Use an ice cream scoop to portion out a spoon of the meat mixture into the bottom of each of the ramekins. Place a wonton wrapper on top of the scoop of meat in the bottom of each ramekin and press down so the meat is evenly distributed on the bottom of the ramekin.
Add another scoop of meat, then another wrapper. Repeat until the ramekin is full with a final wrapper on the top.
Add 1 tbsp of water to each ramekin.
Place the ramekins in a large dutch oven. Fill with water until it goes about half way up the side of the ramekins.
Bring to boil over medium high heat. Once boiling, cover with a lid and steam the ramekins for 25-30min or until the internal temperature reaches 160F.
Pour dumpling sauce over top just before serving. Garnish further with freshly sliced green onions.
