A fluffy, thick, chewy chocolate chip cookie. If this describes your favourite type of chocolate chip cookies, then this is the recipe for you!

Cook time: 8-10 min per batch
Yield: Approx. 50 Cookies
Ingredients
1/2 cup unsalted butter, grated
3/4 cup brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
2 1/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup semi-sweet chocolate chips
Directions
Pre-heat oven to 375F
In a medium mixing bowl, combine grated unsalted butter and brown sugar. Cream together using a hand mixer or stand mixer until the butter and sugar form a homogeneous mixture.
Add egg and vanilla to the butter sugar mixture and combine.
In a separate bowl, mix together the flour, baking powder and salt.
Add the dry ingredients to the wet ingredients all at once. Mix until no dry flour remains. Then add the chocolate chips and mix until they are evenly distributed in the batter.
Line two baking sheets with parchment paper. Scoop out 2 tsp portions using a cookie scoop. Place on baking sheet and flatten slightly with a spatula.
Bake in pre-heated oven for 8-10 min. They should be slightly brown on the bottom, puffy on the top and not set when they come out of the oven.
Let them cool and settle on the baking sheet for 3-5 min or until you can transfer them without them falling apart onto a cooling rack.
