These are quick to make & delicious when you're on the trails or just running from one place to the next. Grab your ingredients and a scale and you can whip these together with minimal dishes & maximum yum!

Yield: 14-16 bars
Ingredients
350g fresh dates
1 cup (125g) walnuts
1/3 cup (35g) cocoa powder
1/2 cup (75g) chia seeds
1/2 cup (45g) flaked coconut
1/3 cup (60g) chocolate chips
1/2 cup (50g) oats
1 tsp vanilla
1/4 tsp salt
Directions
Remove pits/seeds from the dates and place in a medium bowl. Cover with warm water and let them sit for 10-15min to soften up.
Meanwhile, add the walnuts to a food processor and blend/chop until they become a fine crumb.
Squeeze the excess water from the dates and add to the food processor. Blend everything together until it resembles a paste.
Transfer the paste to a mixing bowl. Add all the other ingredients and combine using a rubber spatula until all the ingredients are evenly distributed in the mixture.
Spoon into a parchment lined pan a press down evenly.
Freeze to set for 30min. Remove and cut into 14-16 bars. Store in the fridge in a sealed container.
Zhuzh it up!
Add some cinnamon and ginger or chili flakes to give these bars a special kick in flavour.
Change up the chocolate chips to peanut butter or white chocolate or mint or any other of your favourite chocolate chip flavour.
Add some seeds, like pepitas or sunflower. I would recommend about 1/4 to 1/3 cup.
