Candied Carrot Cake Topper


 



The perfect topper for your carrot cake, these sweet and crunchy candied carrot curls are beautiful and tasty. You can even make them using carrot peels! This genius idea stretches your grocery dollar by using up just about every bit of that carrot.


Prep Time: 15 min

Cook time: 1 hr

Yield: about 20 curls





Ingredients


  • 1 cup water

  • 1 cup sugar

  • 2 large carrots, peeled (or approx. 15-20 strips of carrot peel)

  • parchment paper

  • cooking spray

Directions


  • Preheat oven to 225F

  • Line a baking sheet with parchment paper and spray with cooking oil.

  • With a vegetable peeler, remove 15-20 long strips from the carrots.

  • Bring water and sugar to a boil.

  • Add carrot strips, reduce heat and simmer 15 mins.

  • Drain carrot strips and allow to cool for 5 mins.

  • Lay strips out in a single layer on the baking sheet, making sure they don't touch or they will stick together.

  • Bake for 20 mins. Turn off the oven but leave the pan inside. Remove one or two carrot strips from the pan to the counter (leaving the rest in the oven will help keep them soft while you create your curls).

  • Quickly wind each carrot strip around the handle of a wooden spoon, slide off, and sprinkle with sugar. Continue with the rest of the carrot strips.

  • Allow carrot curls to cool for 30 mins.

  • Layer between wax paper and store at room temperature in an air tight container for up to 5 days.
