Nobody will ever guess these moist chocolate brownies are made with black beans. Gluten-friendly, and sweetened with maple syrup, they're also pretty much guilt-free.

Yield: 1 x 8" pan
Ingredients
1 (19oz) can black beans, well rinsed and drained
3 large eggs
3 tbsp olive oil
1/4 cup cocoa powder
1/2 cup maple syrup
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
1 tsp ground coffee
1/4 cup dark chocolate chips
Directions
Preheat oven to 350F. Grease an 8" baking pan or line with parchment paper.
Rinse and drain black beans.
Add all ingredients except chocolate chips into blender. Blend until smooth, pour into the pan, and sprinkle with chocolate chips.
Bake for 30 mins or until a toothpick inserted in the centre comes out clean.
