A version of a basic Sour, the Bees' Knees gets its name from the addition of honey simple syrup.
Add the following to a shaker with ice. Shake, strain into a glass and enjoy.
1 ounce honey syrup
1 ounce lemon juice
2 ounces gin
To make honey syrup:
Combine 1/2 cup each honey and water to a small saucepan. Bring to a boil and then simmer, stirring, until honey has completely dissolved and syrup has thickened slightly (about 5 minutes). Refrigerate in an air-tight container for up to one month.
