Fluffy with a crispy buttery crust, this corn bread is an essential side dish for when your dining on ribs
Prep Time: 10 min
Cook time: 15-20 min
Yield: 1 loaf
Ingredients
1 cup all-purpose flour
3/4 cup cornmeal
3 tbsp granulated sugar
2 1/2 tsp baking powder
1 tsp salt
1 tbsp butter
2 eggs
1 cup milk
1/4 cup melted butter
Directions
Pre-heat BBQ to 400F
In a medium bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Set aside the dry ingredients.
In a separate bowl, combine the 2 eggs, milk and melted butter. Set aside the wet ingredients.
Place a 8-9-inch skillet in the preheated BBQ for 10 min to heat it up. Remove and add the single tablespoon of butter to the pan. Tilt the pan to roll the butter around until it covers the entire pan. Set aside.
Add the wet ingredients to the dry ingredients and stir together the batter with the handle of a wooden spoon. Pour into the buttered pan. Bake for 15-20 min or until a tester inserted in the centre of the bread comes out clean.
Slice and serve while warm.

This can also be baked in the oven @ 400F.
You can also bake these as muffins or in corn bread pans for the same time and temp!
