Take your side dish to the next level. This recipe makes rice pop with lemony flavour and colour.

Serves 4-6
Ingredients
2 tbsp unsalted butter
1 tbsp olive oil
4 green onions
3 cloves garlic, minced
1 tsp dried lemon peel (or 1 tsp lemon zest)
1 cup long grain rice, like basmati
1/4 tsp turmeric powder
1 cup chicken broth
1 cup coconut milk (or half-and-half cream)
3 tbsp lemon juice
Directions
Thinly slice the white and green parts of the green onions and keep in separate dishes.
In a medium saucepan, add butter and olive oil. Melt over medium-low heat, then add in the white onion slices and sauté for about a minute.
Then add in the diced garlic and lemon peel. Stir and cook until you can just start smelling the garlic.
Add the rice and turmeric and season with salt and pepper. Cook for another minute, stirring together everything in the pan.
Add in the broth, coconut milk and lemon juice. Stir together everything in the pan and increase the heat to medium-high. Once it begins to boil, reduce the heat to a low simmer and cover the pan. Let the rice simmer for 15-20 min or until all the liquid has been absorbed.
Remove from heat and let sit for 5 min before removing the lid and fluffing up the rice with a fork.
Garnish with the thinly sliced onion greens and enjoy!

If you've got salted lemons, you can use them to intensify the flavour. Don't add any extra salt if you do this!
