Greek Marouli Salad

The flavours in this Marouli salad reminded us of a Greek version of a Caesar Salad. A whole iceberg lettuce makes a lot, and this is great as leftovers the next day or it can be used to add an extra punch of flavour to a sandwich or burger!



Prep Time: 15 min

Yield: 6 Servings


Ingredients

  • 1 iceberg lettuce

  • 1 bunch green onions

  • 185g feta cheese

  • 1/4 cup fresh dill, chopped

  • 3 tbsp oregano, dried

  • 2 cloves garlic, grated

  • 1 lemon, zest & juice

  • 1 tbsp white wine vinegar

  • 4 tbsp olive oil

  • 1/2 tsp salted lemon salt *optional

Directions

  1. Cut the iceberg into quarters & cut out the centre core. Chop into thin slices to create a shredded lettuce. Add to a large salad bowl.

  2. Chop up the bunch of green onions into thin slices and add to the salad bowl.

  3. Crumble feta cheese & finely chop the dill & add into the salad bowl along with the dried oregano.

  4. To make the dressing, in a salad jar combine the garlic, lemon juice & zest, the vinegar, oil and salted lemon salt. Shake and drizzle over the salad.

  5. Mix the salad and dressing thoroughly before serving.

Zhuzh it up!

  • Make this salad your whole meal by adding cooked chicken or salmon to it.

  • The garlic in this recipe is STRONG. Feel free to adjust the number of cloves based on your preferences.
