Crispy Rice Squares

This classic lunchbox treat is quick to whip up on your stovetop & easy to decorate or cut out into fun shapes for special celebrations.



Prep Time: 10 min

Cook time: 10 min

Yield: 24 squares



Ingredients

  • 250g white marshmallows

  • 1/4 cup butter

  • 6 cups crispy rice cereal

Directions

  1. Grease a 9 x 11 baking dish with butter.

  2. In a large pot over medium heat, melt butter and marshmallows, stirring until smooth and creamy.

  3. Remove pot from heat and add in crispy rice cereal all at once. Stir to combine.

  4. Pour and scrape out the sticky cereal & marshmallow mixture out of the pot and into the greased baking dish using a rubber spatula. If the mixture is sticking, wet the spatula with a bit of water. Press firmly into the baking dish.

  5. Cover and let cool before cutting into squares. Store in fridge or freezer in a sealed container.

Zhuzh it up!

  • Use a baking sheet & spread the cereal and marshmallow mixture thinner. Once cooled, cut out into fun shapes with a cookie cutter.

  • Add a bit more to the squares by adding an extra 1/4 cup of seeds & dried cut-up fruits. Add when you add the cereal.

  • Scatter fun sprinkles over the sticky squares before they cool to make them extra special & fun!
