BBQ Chicken Sliders

A great lunch that goes together quick & satisfies hungry tummies!

 

Need something easy to make on a busy night or to feed a bunch of hungry kids? Pick up the pre-cooked chicken at the store and you can get this on your table in 30 min or less. Scale up the serving size for your crowd!



Prep Time: 15 min

Cook time: 15 min

Yield: 12 kids or 6 adults


Ingredients

  • 1 pkg 12 dinner buns

  • 1 pre-cooked chicken

  • 1/2 cup BBQ sauce

  • 1 cup marble cheese, grated

  • 1/2 onion, sliced

  • 10 mushrooms, sliced

  • 1/2 pkg coleslaw

  • 3-4 tbsp mayonnaise

  • 1 tbsp lime juice

Directions

  1. Pre-heat oven to 350F.

  2. Place bun on a parchment lined baking sheet and slice in half. Remove the top half and set aside.

  3. De-bone the chicken and chop it up. Mix it with the BBQ sauce in a large bowl. Add more or less sauce to your preference.

  4. Spoon the sauce coated chicken onto the bottom half of the buns.

  5. Cover the chicken with the grated cheese.

  6. Place in the pre-heated oven for 10min.

  7. Then, turn on your broiler and broil until the cheese is bubbly, about 5 more min.

  8. Meanwhile, in a medium saucepan, fry the sliced onions and mushrooms in butter until soft. Season with salt and pepper and set aside.

  9. In another medium bowl, mix together the coleslaw, mayo and lime juice. Set aside.

  10. When the chicken & cheese buns come out of the oven, spoon the onion & mushroom mixture and the coleslaw over the buns and cover with the top half of the buns.

  11. Slice through each serving and place in front of your hungry crowd with napkins.

Zhuzh it up!

  • If you've got more time try the following:

    • BBQ your own chicken with your own BBQ spice rub of paprika, brown sugar, garlic powder, onion powder, cumin, salt, pepper, cinnamon, cayenne pepper and oregano.

    • Make your own coleslaw by thinly slicing 4-6 cups of napa cabbage & grating 2 carrots.
