Za'atar Flatbread with Caramelized Onion

This recipe is from the Wonder Oven recipe booklet, but it should work just as well in a regular convection oven. Top it with whatever you like!

Yield: 4 servings

Ingredients

  • 8 oz water

  • 1 tbsp instant yeast

  • 1tsp sugar

  • 15 oz all purpose flour

  • 1 tbsp za'atar spice

  • 2 tsp sea salt

  • 1 red onion, thinly sliced

  • 2 sweet onions, thinly sliced

  • salt & pepper to taste

  • Fresh mozzarella torn or grated
     

Directions

  1. Mix warm water, yeast and sugar in a small bowl and set aside. In a large bowl, mix flour, salt and spice.

  2. After about 5 mins, the yeast should be activated and bubbling. Add it to the dry ingredients and mix together.

  3. Knead dough for about 5 mins. Add a little oil to the bowl to prevent sticking and place the dough in the bowl. Cover with a towel and let rise for 1 hour.

  4. Prepare the onions: in a pan over low-medium heat, warm 1-2 tbsp of oil. Add onions and a pinch of salt. Cook for abut and hour, stirring occasionally. Be careful not to burn them.

  5. When dough has risen and onions are ready, preheat the oven to 450F on Bake mode.

  6. Role a fist-sized piece of dough into a ball and flatten it into an oval shape about 1/8" thick using a rolling pin. Lay it directly on the wire rack, top with some of the onions and sprinkle with cheese.

  7. Place rack in the oven in the top position and add 10ml water to the water inlet.

  8. Cook until edges begin to brown, about 5 mins.

  9. Remove and sprinkle with salt and pepper, and serve.

  10. Repeat steps until all the dough is used.
